Ingredients
• 2 pounds bone-in chicken, cut into chunks
• 3 cups basmati rice
• 1 large onion, sliced
• 4-5 cloves of garlic, chopped
• 1 inch grated ginger
• 2 tomatoes, chopped
• 1 cup plain yogurt
• Biryani Masala Powder 2 tablespoons
• 1 teaspoon turmeric powder
• Cumin powder 1 teaspoon
• 1 teaspoon coriander powder
• 1 teaspoon paprika powder
• half a cup of chopped fresh cilantro
• half a cup of chopped fresh mint
• 3 tablespoons olive or vegetable oil
• salt to taste
• 4 glasses of water
Instructions
• 1st step - Wash the basmati rice in cold water until the water runs clear. Rice should be drained after 30 minutes of cool water soaking.
• 2nd step - In a sizable, heavy-bottomed saucepan, boil vegetable oil or vegetable oil over medium-high heat. Add the onions, stirring occasionally, until golden brown.
• 3rd step - Add the garlic and ginger and cook for an additional minute or until fragrant.
• 4th step - Add the chicken to the pan and fry until both sides are brown.
• 5th step - Add chopped tomatoes and cook for 2-3 minutes, stirring occasionally.
• 6th step - In a dish, combine yogurt, biryani masala, turmeric, cumin, coriander, red chili powder, coriander, and mint.
• 7th step - Pour the yoghurt mixture into the pan and mix well.
• 7th step - Add the drained rice to the saucepan and mix gently.
• 8th step - Add the water and salt to the saucepan and mix a little.
• 9th step - Place the mixture over high heat until it boils, then reduce the heat and cover the saucepan tightly.
• 10th step - For 20 to 25 minutes in the oven, or until the rice is tender and the poultry is thoroughly cooked, bake the biryani.
• 11th step - Remove the pan from the heat and let sit for 5 to 10 minutes before serving.
